Brazilian Chicken with Sweet Potato Mash and Avocado Salsa

For the Chicken:
- 1.5 lbs Chicken breast or thighs boneless, skinless (700g)
- 1 tablespoon Olive oil
- 3 Cloves Garlic minced
- 1 teaspoon Paprika
- 1 teaspoon Cumin
- 1/2 teaspoon Smoked paprika optional
- 1 tablespoon Lime juice
- Salt and pepper To taste
For the Sweet Potato Mash:
- 2 Large Sweet potatoes peeled and cubed
- 1-2 tablespoon Butter
- Garlic powder 1/2 teaspoon
- Salt To taste
For the Avocado Salsa:
- 1 Large Avocado diced
- 1/2 Large Red onion finely chopped
- 1 Medium Tomato diced Small
- 1 Large Collored Pepper (Red, Green, or Yellow) diced Small
- 1 Large Cucumber diced small
- 2 tablespoons Fresh cilantro chopped
- 1 teaspoon hot red pepper flakes
- 1 tablespoon Lime juice
- Salt and pepper To taste

Step 1: Prepare the Sweet Potato Mash
Bring a pot of water to a boil and add the cubed sweet potatoes. Cook for 12-15 minutes, or until tender.
Drain the sweet potatoes and return them to the pot. Mash them with butter, garlic powder, and salt until smooth and creamy. Set aside.
Step 2: Cook the Chicken
In a small bowl, mix the garlic, paprika, cumin, smoked paprika, lime juice, salt, pepper, and optionl turmerric to create a spice rub.
Rub the mixture evenly over the chicken breasts or thighs.
Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 6-7 minutes on each side, or until golden brown and fully cooked (internal temperature of 165°F/75°C). bast with butter for more juicy texture.
Remove from the skillet and let rest for a few minutes.
Step 3: Make the Avocado Salsa
In a medium bowl, combine the diced avocado, red onion, peppers, cucumber, tomato, cilantro, lime juice, salt, and pepper. Gently mix to combine.
Step 4: Assemble the Dish
Serve the grilled chicken alongside a generous portion of sweet potato mash.
